Boxty, from the Gaelic word "Bacstai" referring to the traditional method of grilling over an open fire, describes a potato pancake which is cooked and wrapped around a variety of delicious fillings. This method of cooking, traditionally from the Northwest of Ireland, is still used today. Our Boxty menu includes the following delicious choices:
- Tender grilled chicken with fresh sage and red bell pepper.
- Genuine Irish "Galtee" rashers with melted Irish cheddar.
- Poached fresh salmon and tender juicy shrimp.
- Marinated corned beef with cabbage.
- Fresh, crisp vegetables, lightly sautéed.
